Ostuni Hotels: Staying at Paragon 700 Boutique Hotel (Review)

If you’re planning a Puglia road trip or to visit the wonderful hilltop town of Ostuni in Italy’s heel then you’ll need somewhere to stay.
Whether you’re looking to base yourself in Ostuni and do day trips around Puglia or just planning to stay in Ostuni for a couple of nights before moving on, you’ll be pleased to know that Ostuni has a few gems.
Among those gems is Paragon 700 Boutique Hotel & Spa, a design-focused boutique hotel, located inside a newly renovated 17th Century palace in the heart of Ostuni’s historic center.
It’s one of my favorite Ostuni hotels and its stunning, unique design, attentive service, and essential amenities mean it’s a no-brainer when looking for a true boutique experience in Puglia.
In this post, I’ll tell you all about Paragon 700 and what you can expect from staying at this beautiful hotel. Hopefully, this will make your accommodation decisions a little easier when deciding on where to stay in Puglia.

What I love about Paragon 700 is that it’s one of the most unique hotels you’ll find in Puglia; both in terms of service and design.
If you’ve already done some research about luxury Ostuni hotels or where to stay in Puglia you’ll notice a lot of trulli and masserias (country houses) that are mostly characterized by rustic, white, stone architecture, olive tree gardens, ceramic pots, and various local antiques.
While that’s all part of experiencing Puglia, Paragon 700 is very different indeed. When it comes to design, Paragon 700 is palatial, grand, dark, and almost gothic at times.
While there certainly are many classic Apuglian elements to the property, Paragon 700 has various unique styles, carefully sourced antique furniture, and art you won’t find anywhere else.

What Makes Paragon 700 Different from Other Ostuni Hotels?
There are many aspects of Paragon 700 that will make your stay memorable, comfortable, and seamless. From the warm welcome to functional yet swoon-worthy decor to fine dining experiences, nowhere else in Ostuni brings all these experiences to guests under one roof.
Here are some features I loved that really set Paragon 700 apart:
↠ Paragon 700 Boutique Hotel is the only hotel in the historic center of Ostuni to have an outdoor swimming pool. If you’re visiting during the summer months, this is a REAL bonus- perhaps even a necessity.
↠ There are only 11 suites and each one has a very different feel. It does make choosing a suite category that much more difficult but it’s a challenge I’m prepared to take on.
↠ The beautifully curated design is like nowhere else in Puglia. Each piece in every suite is carefully selected and sourced from around the world. The best part? Many pieces of furniture and artwork around the hotel are for purchase so you can take a little home with you. You can also buy the lovely robes and Paragon 700’s signature scent among others.
↠ The bar, under the careful eye of an expert mixologist serves the best cocktails in Ostuni, probably even Puglia.
↠ Kind and attentive staff that is there to cater to every need.
↠Paragon Suite- the finest suite in the whole hotel that really connects you with the history of the 17th Century palace.
Room Types:
What I also loved about Paragon 700 Boutique Hotel is that even though there are only 11 rooms and suites, there are four different categories of stay. This means that you can experience this luxury, 5-star boutique hotel without breaking the bank.
Deluxe Room: The smallest room choice allows you to live the Paragon 700 experience without having to over your vacation budget.
Deluxe Suite: 38-46 sqm rooms with exclusive design and bespoke features and 7 meter-high ceilings. King beds in all deluxe suites.
Superior Suite: Bespoke design, high ceilings, and large spaces. The superior suites are unique and feature various elements. Our favorite has the be the Onyx Black Suite where the entire suite is black from the walls to the bathtub.
Paragon Suite: A 55 sqm luxury suite with a King-size bed, in-room giant- bathtub, exclusive furnishings, and century-old frescos. Experience the beautiful elements of the 17th Century palace here and spend hours basking in the sunshine on the private, panoramic terrace.

Everything You Need to Know Before Staying at Paragon 700
While Paragon 700 Boutique Hotel works very much like any other hotel you might book, here’s what you need to know about its location, amenities, services, and experiences so you can choose the best option for your needs.
Location
Paragon 700 is located in the historic center of Ostuni, just a stone’s throw away from everywhere you want to be. It’s just 5 minutes from Piazza della Libertà- the heart of historical Ostuni.
If you’re arriving by rental car, your stay includes valet parking so no need to worry about where to park.
The hotel is also located outside the ZTL (Zona a Traffico Limitato) so no need to worry about avoiding the hefty fines that come with driving through Puglian town centers without authorization.
Amenities
Paragon 700 is a small, boutique hotel with personalization of service and great attention to detail. Each of the property’s 11 rooms and suites and different and offer various features like a steam bath, balcony or terrace, large bathroom, or in-room free-standing tub.
Rooms are named after semi-precious stones and our favorites are the Paragon Suite, the Ruby Suite, and the Onyx Suite.
Another unique feature of Paragon 700 is its large pool area and garden, features that are almost impossible to come by in the historic center of towns in Puglia.
The beautiful pool area is complete with loungers for relaxation, a seating area, and an outdoor bar in the summer. It’s the perfect place for a slow, late breakfast, an afternoon dip, or a sundowner before dinner.
At the back of the property, you’ll also find its small garden complete with citrus trees.
Set 7 meters below ground in what used to be the palace’s water cistern is the Paragon 700 Spa. It’s the place for relaxation and rejuvenation and the ideal way to get your vacation started.
The intimate space is exclusively for the use of two people at a time. The spa features a hydromassage pool, spa shower with chromotherapy, and steam room as well as two calming treatment rooms ready for massages or facials, or anything else you desire.
Food & Drink
The food and dining experience at Paragon 700 is second to none and it was a real highlight for us during our stay.
Restaurant 700
Paragon 700’s fine dining restaurant offers a superior culinary experience in the heart of Ostuni. Apart from its delicious breakfast menu, the restaurant also offers an A La Carte tasting menu, Sunday brunch, and Bistrot menu which is ideal for lunch and room service.
Restaurant 700, located in the olive milling area of the 17th Century palace- with a convivial table that used the be the old olive mill- serves up gastronomical delights. The farm-to-table cuisine is centered around Apuglian traditions and ingredients yet has a modern and sophisticated flare.
Dinner here is a real treat and the restaurant is open for guests and the public alike. Read the A La Carte Menu here and reserve a table here during your stay in Ostuni.
There’s also a room service menu that features Puglian and Italian classics as well as international favorites.
Lounge Bar 700
The 8.5-meter stone bar is where you want to be in the evenings in the good hands of Paragon 700’s master mixologists. They create signature cocktails with menus that change seasonally.
The stunning bar is adorned with decorative tin plates from Argentina, unique bottles, and signature potions and ingredients. It has a real cozy, timeless, and gothic feel with a touch of turn-of-the-century Parisian elegance.
Everything needed to create out-of-this-world cocktails that are heaven for the taste buds is right here.
The Lounge Bar 700 is open for all so even if you don’t end up staying at Paragon 700, definitely consider coming by for cocktails one night during your stay in Ostuni.
Paragon 700 also has an in-house wine cellar, housed in a converted olive oil cistern. They serve some of the best wines Apuglia has to offer including Primitivo, Negroamaro, and the lesser-known Susumaniello varieties. They also have their own signature wines as well as Champagne.
Service
Service is fluid, personalized yet relaxed and friendly. Staff is always there to offer things you need before you’ve even realized you need them. For me, that’s the definition of good service.
From check-in to dining service all the way through to check-out, service was seamless and our experience was extremely positive.

Apart from the amenities, spa, bar, and restaurant, Paragon 700 Boutique Hotel also organizes a few different experiences that will make your stay extra special. They include:
Wine Tasting: Sit down with Paragon 700’s sommelier and prepare yourself for a deep dive into Puglia’s wine. You’ll taste the most popular varieties of Puglian wine and discover the different wine regions of Puglia.
Cocktail Classes: For those that love cocktails and want to learn more about mixology and creating cocktails Paragon 700 also offer a cocktail-making class where you’ll learn the basics as well as cocktail recipes you can take home. You’ll get behind the bar with Paragon 700’s expert mixologist and learn everything there is to know about making the perfect cocktail.
Exclusive Cruises: Aboard the 15-meter private yacht, the P Boat, the Captain, and crew can organize a unique itinerary for guests along the stunning Puglian coastline.

Would I recommend Paragon 700?
Absolutely, yes! We had a wonderful stay at Paragon 700 and I would highly recommend a stay here to anyone looking for a luxury, boutique hotel as a base for their travels around Puglia and Ostuni.
If you’re someone, or a couple, who loves unique hotels, design-focused stays with brilliant food and drink experiences, and 5-star service, then I’m sure you’ll love staying at Paragon 700 Boutique Hotel in Ostuni.
Who is Paragon 700 not for?
Paragon 700 is a luxury, 5-star boutique hotel that caters to adults-only. Rooms are aimed more at couples, so if you’re visiting Puglia as a family with young children, this won’t be the place for you.
If you prefer uniform, modern rooms that a popular chain might offer, or you prefer to book your hotel stay with travel points, this won’t be the stay for you either. Do bear in mind, however, that there aren’t many chain hotels e.g Hyatt or Marriott in Puglia.
If you’re looking for Ostuni hotels in the countryside amongst large olive groves, this won’t be the place either. However, you can easily combine a countryside stay with a stay at Paragon 700 over the course of your Puglia itinerary.

Paragon 700 offers one of the most idyllic stays in Puglia we’ve had the pleasure of experiencing. If you’re looking for a boutique stay with that wow factor, or even just a very comfortable spot with a swimming pool and great service, Paragon 700 is the place for you.
It’s also an ideal spot for a celebratory stay be it a birthday, anniversary, or even honeymoon. Either way, you won’t be disappointed.
