Is there anything more delicious and versatile to whip up in the kitchen that a vegan burrito? I think not. Vegan Burritos are a popular meal-in-a-tortilla option that are filling, healthy and portable. They are great for eating at home or on the go and even for work or school lunches as they carry well. There are also so many filling options that you can just wrap up in a tortilla from the classic vegan black bean burritos to curried chickpea burritos and even lentil ‘meatball’ burritos.
While going out and getting vegan burritos are a great way to fill up both at home or when travelling, homemade ones can be just as delicious and easy to make.

WHAT YOU’LL NEED FOR A VEGAN BURRITO:
- Soft flour tortillas (use gluten-free if preferred)
- Canned black beans
- Onion
- Fresh or canned tomatoes
- Cajun Spice Mix
- Guacamole
- Vegan Sour cream
- Salsa
- Lime juice
- Vegan Grated cheese
- Cooked brown rice
- Shredded lettuce
- Cilantro
- Hot Sauce (optional)
HOW TO MAKE VEGAN BURRITOS
There are a few components that go into vegan burritos, which you’ll find above and the more of them you use the more ‘full’ and delicious your burrito will be. I always make sure to use a protein, normally black beans cooked with onion and tomato, cooked brown rice, salsa, guacamole and either vegan sour cream or cheddar cheese- normally whatever I have on hand.
To make the black beans, start by adding a little olive oil into a pan and when hot add the chopped onion. Sauté the onion until soft and translucent and add the spices. I like to use 1 tsp of a pre-combined cajun mix of spices plus, 1/2 tsp cumin which I find perfect for burritos. Alternatively, you can make your own by using this recipe. Saute for one more minute or so but be careful not to burn the spices. Then add your chopped tomatoes. You can either use fresh tomatoes and chop them yourself or use canned tomatoes. After a few minutes of cooking add the canned, cooked black beans and cook for a further 15 minutes with the lid on or until the mixture because quite thick and rich.
Next comes the assembling and rolling. Make sure you have all the ingredients ready.
Lay down a tortilla on a large, flat plate or a chopping board. Place some rice in the centre of the tortilla. Then add the spiced bean mixture on top. Next add the guacamole, salsa, vegan sour cream, vegan cheddar and lettuce. Sprinkle over some cilantro, lime juice and any extra hot sauce.
Fold in the sides of the burrito and roll it up in one swift motion. If you prefer your burrito warm and gooey then at this point heat up a pan or a griddle and place the burrito in the pan (without oil), grilling it on both sides for a few minutes. Wrap the burrito in foil, cut it in half and enjoy!

VEGAN BURRITOS MAKING TIPS:
↠ If you don’t have much time for making your own guacamole and salsa, feel free to buy it ready-made. This will decrease the time you spend making the burritos significantly.
↠ While it might be tempting to overfill your burrito, especially if you’re hungry, try not to stuff too much it as it will make it more difficult to roll and you risk tearing the tortilla. If you would like to make a big, chunky burrito opt for a large-sized tortilla.
↠ To make it easier to eat, make sure to rewrap the burrito in tin foil. This will allow you to eat it easily- by unwrapping the top as you go and allows you to eat the burrito with minimal mess making it perfect for lunches or picnics.
