Built between the 15th and 17th centuries, these sprawling rural estates once served as self-sufficient farms, producing olive oil, wine, grains, and cheese while housing the families and workers who lived and worked the land.

Many were fortified with thick stone walls and watchtowers to protect against raids along Puglia’s coastline.

Today, these historic estates have taken on a new life. While some remain working farms or produce their own olive oil and wine, many have been beautifully restored into boutique hotels. Others now operate as acclaimed restaurants, wedding venues and event spaces, blending centuries of history with contemporary design and warm Puglian hospitality.

Just outside Savelletri, this beautifully restored 15th-century estate blends understated elegance with impeccable service, surrounded by centuries-old olive groves and just moments from the Adriatic coast.

Owned by the Rocco Forte Hotels collection, Masseria Torre Maizza is one of the finest luxury stays in Puglia and delivers exactly the level of service the brand is known for.

Set among centuries-old olive groves just outside Savelletri, the beautifully restored 16th-century masseria pairs traditional Puglian architecture with elegant interiors by Olga Polizzi, creating a refined yet wonderfully relaxed atmosphere.

Masseria Il Frantoio

For one of the most authentic (and traditional) masseria experiences in Puglia, it’s hard to beat Masseria Il Frantoio. Set among ancient olive groves just outside Ostuni, this family-run estate is still a working organic farm, producing some of the region’s finest extra virgin olive oil.

Their guided olive oil tasting is one of the best in Puglia, taking you through the historic underground mill, centuries-old groves, and a tasting of four estate-produced oils led by an expert olive oil sommelier.

Agriturismo Masseria Salamina

One of Puglia’s oldest working masserie, Masseria Salamina offers a wonderfully authentic stay surrounded by ancient olive groves just inland from Savelletri.

Family-run for generations, the estate still produces its own olive oil and wine, and there’s a genuine sense that agriculture remains at the heart of everything here. The rooms are simple, traditional and full of character, staying true to the building’s centuries-old history rather than chasing contemporary trends.

The restaurant is another highlight, serving classic Puglian dishes made with ingredients from the estate and surrounding countryside. The beautifully restored estate strikes the perfect balance between traditional masseria architecture and contemporary interiors, with vaulted stone ceilings, limewashed walls and original features softened by natural textures, bespoke furniture and a beautifully pared-back aesthetic.

It’s a calm, understated retreat where the design never overshadows the building itself. Days are spent around the elegant pool, exploring the nearby wineries of Salice Salentino or simply enjoying the peaceful surroundings. If your idea of the perfect masseria combines heritage with thoughtful, modern design, Masseria Pezza is an easy recommendation.

Masseria Marzalossa

Just outside Fasano, Masseria Marzalossa is one of Puglia’s most elegant historic estates.
