Heavenly Vegan Roasted Red Pepper and Tomato Soup Recipe
As fall starts to set in and the weather turns cooler, landscapes more orange and sweaters come out most us also turn to food options that nourish yet warm the body from the inside out.
Recently on Instagram, I shared a post of one of my all-time favourite recipes, vegan roasted red pepper and tomato soup, perfect for fall and the colder days ahead. You guys really wanted me to share the recipe so here it is.
This vegan roasted red pepper and tomato soup is sweet yet tangy from the tomatoes with a distinct smokey flavour from the peppers. It’s flavoursome, creamy and delicious. It’s so easy to make and most of the work is hand-off allowing you to get on with something else.
Is there anything cosier than sitting in front of a fire with loved ones under a blanket eating a delicious bowl of soup?
RED PEPPER AND TOMATO SOUP VARIATIONS:
Basil: For a more Italian flavour profile a few sprigs of basil to serve adds a completely different taste to the soup. Alternatively, you can also chop it up and stir it into each serving bowl.
Coconut Milk: For a much creamier soup consider adding half a cup of coconut milk when blending. The mix of tomato, red pepper and coconut is to die for.
Leave out the red pepper: If you don’t have much time or no red peppers to hand don’t worry- this soup also works really well using only tomatoes.
SERVING SUGGESTIONS:
This soup is delicious in it’s own or topped with basil, Italian herbs and/or croutons.
It also works so well with a classic vegan grilled cheese sandwich on the side- the crustiness of the. toasted bread and the gooiness of the cheese are a perfect pair for this tangy and creamy soup.
If you don’t feel like going quite as far as a grilled cheese sandwich, why not serve this soup with some crusty baguette or a toasted slice of sourdough?
To make the soup even more creamy and indulgent you can also top it with cashew cream or other plant-based creams of choice?
To make this recipe you don’t need much in terms of kitchen equipment. You will need a couple or at least one baking tray and a good blender. I find that a high power blender is a staple in every kitchen for a variety of recipes from soups to smoothie bowls. I use this Vitamix blender which I highly recommend. VEGAN ROASTED TOMATO AND RED PEPPER SOUP RECIPE
*If you’re pushed for time you can chop up the peppers and roast them in the same tray as the tomatoes and onions. This will cut back on the time but you won’t get the same smokey flavour that comes from roasting and charring the peppers whole.
*You can char the peppers on a grill or outdoor barbeque if you prefer.
This soup is delicious, creamy, healthy and nutritious, warming and completely plant-based. It’s the perfect warmer as the colder weather settles in.
