A jacket potato, or, a whole cooked potato is versatile, easy and filling. It’s quick, easy and you can pretty much top it with whatever ingredients you have to hand or with what flavours inspire you most. It’s the perfect recipe to make after a long day at work or when you really don’t have much time on your hand. Here is my favourite way to make sweet potato jackets with all the topping combinations I’ve tried and tested in the past from Mexican to Italian. These suggestions are all healthy, plant-based and oh so delicious.
Normally, sweet potato jackets are roasted in the oven for about 45 minutes – one hour and if you do have the time then you can just stab them with a knife a few times and pop them in the oven to roast. If you don’t have close to an hour however, here is my hack that will have you eating in just over 10 minutes. Yep, you heard just 10 minutes. This is perfect for those long days or when you’re travelling and you looking for a quick yet delicious hotel or Airbnb meal.
This sweet potato jacket recipe is so versatile that you can pretty much choose your own toppings for this, depending on where you are and what you have access too. Check for my suggestions below.
For this recipe, you’ll need to have access to a microwave and basic utensils such as a knife, fork, and plate. You also need kitchen paper and even though I haven’t tried it, lots of toilet paper would work too.
SWEET POTATO JACKET RECIPE
Serves 2
– 2 good sized sweet potato or if you can’t get any a white potato will also work.
Topping suggestions:
Vegan Butter & Grated Vegan cheese of choice
Sliced avocado or guacamole
Vegan Coleslaw or Sauerkraut
Tomato salsa and coriander (cilantro) & Guacamole
Baked beans or refried beans.
Vegan Sour cream, salsa, cream cheese and chives.
Sauteed mushrooms and spinach
Hummus, olives and tomatoes.
Sauteed onions and vegan cheddar cheese
Sweet potato jacket toppings by cuisine:
Italian: Pesto or tomato sauce, herbs, vegan Italian cheese / grilled veggies.
Greek: Vegan Feta cheese, cucumber, tomato and chopped tomato and oregano
Mexican: Black beans, taco spices, vegan cheese, guacamole and salsa
Middle Eastern: Hummus/Falafel tomatoes, olives and parsley
Instructions
Wash the potato and pierce the flesh with a knife a few times all the way around. Wrap the potato in kitchen paper until it’s completely covered then pop it in the microwave. Cook on high for 10 minutes flipping it once until it’s tender when pierced with a knife. If it’s still a little hard heat it for a little longer, checking back every 2 minutes.
*If baking more than one potato add about 5 minutes more to the cooking time.
Once done transfer to a serving plate, cut it lengthways and season with salt and pepper and pile on your favourite toppings.
